Broccoli Soup
A simple, satiating soup that will not only up your daily dose of fibre but will also give you the nutritional punch of Vitamin C, A and potassium.

Ingredients
- 1 Large Head (1 kg) Broccoli
- 2 Tbsp Extra Virgin Olive Oil
- 2 no. Garlic Cloves Finely chopped
- 1 no. Medium Onion Finely chopped
- 1 no. Medium Potato Peeled and Diced
- 6 cups Vegetable broth / Water
- To taste Salt
- To taste White Pepper Freshly Ground
- For Seasoning Mixed Herbs
Instructions
- Wash and separate the broccoli florets.
- Heat Olive oil in a large soup pot over high flame and add onion and garlic, saute until soft (2-3 minutes).
- Now add the broccoli, potato, broth or water.
- Partially cover and simmer over low heat until the broccoli is tender (about 15 mins).
- Remove from the flame and let it cool down.
- Now blend to a smooth puree in a food processor.
- Add salt and white pepper.
- Reheat the soup just before serving.
- Season it with herbs and serve hot.
