Broccoli Soup
A simple, satiating soup that will not only up your daily dose of fibre but will also give you the nutritional punch of Vitamin C, A and potassium.

Ingredients

Large Head (1 kg)
Broccoli

Extra Virgin Olive Oil

Peeled and Diced

Vegetable broth / Water
To taste
Salt
To taste

Freshly Ground

Instructions
Wash and separate the broccoli florets.
Heat Olive oil in a large soup pot over high flame and add onion and garlic, saute until soft (2-3 minutes).
Now add the broccoli, potato, broth or water.
Partially cover and simmer over low heat until the broccoli is tender (about 15 mins).
Remove from the flame and let it cool down.
Now blend to a smooth puree in a food processor.
Add salt and white pepper.
Reheat the soup just before serving.
Season it with herbs and serve hot.
