Granola with Pumpkin seeds and Goji Berries

A quick, simple and filling snack that can be made in advance and stored. It is a healthy nutritious mix of oats, buckwheat, nuts and seeds. It is high in protein and micro nutrients which gives a great boost to your day.

Ingredients

  • 90 gms (1cup) Rolled Oats
  • 170 gms (1cup) Raw Buckwheat Groats
  • 60 gms (1/2 cup) Walnuts chopped
  • 35 gms (1/4 cup) Pumpkin seeds
  • 55 gms (1/2cup) Goji berries
  • 2 Tbsp Raw honey
  • 2 Tbsp Coconut Oil

Instructions

  • Preheat the oven to 350° F (180°C) for 10 minutes.
  • Melt the coconut oil in a saucepan over low heat and let it cool.
  • Once cooled, mix all the ingredients in a bowl using your hands.
  • Spread the mixture thinly on a baking sheet and bake in the pre heated oven for 10 minutes or until lightly toasted.
  • Cool before serving or storing in a container in a cool, dry place.
