Granola with Pumpkin seeds and Goji Berries
A quick, simple and filling snack that can be made in advance and stored. It is a healthy nutritious mix of oats, buckwheat, nuts and seeds. It is high in protein and micro nutrients which gives a great boost to your day.
Ingredients
- 90 gms (1cup) Rolled Oats
- 170 gms (1cup) Raw Buckwheat Groats
- 60 gms (1/2 cup) Walnuts chopped
- 35 gms (1/4 cup) Pumpkin seeds
- 55 gms (1/2cup) Goji berries
- 2 Tbsp Raw honey
- 2 Tbsp Coconut Oil
Instructions
- Preheat the oven to 350° F (180°C) for 10 minutes.
- Melt the coconut oil in a saucepan over low heat and let it cool.
- Once cooled, mix all the ingredients in a bowl using your hands.
- Spread the mixture thinly on a baking sheet and bake in the pre heated oven for 10 minutes or until lightly toasted.
- Cool before serving or storing in a container in a cool, dry place.
