Spinach Mushroom Soup
Drink your greens with this healthy yet tasty soup. The regular Spinach has become exotic as it got paired with mushrooms. This soup is a package of fibre, B vitamins, antioxidants and vitamin D.

Ingredients

Spinach (about 1 bunch)
cleaned well with the delicate stalks

Mushrooms (about 1 cup)
cleaned and sliced

Green peas

Spring onions ( onions with the greens)
cleaned and chopped

Potato
peeled and cubed

Olive oil
to
taste
Salt
to
taste
Pepper powder

taste
Lime juice
Instructions
Heat oil in a pressure cooker.
Add mushrooms, saute for 2-3 mins.
Add spring onions, saute till transparent.
Add the potato and peas, stir for 2 mins.
Then add the spinach and spring onion greens.
Add water just enough to cover the veggies.
Pressure cook for 5-8 mins.
Cool and blend well, adding water if too thick.
Add salt, pepper, and heat, add lime juice just before serving.
