Golden Glow Soup
Enjoy this simple, quick and easy soup made with regular, local super foods like carrots and tomatoes loaded with beta carotene and other antioxidants to boost your immune system.
Servings: 4 servings
Ingredients
- 2 medium Onions cut into slices
- 2 medium Carrots washed and lightly peeled
- 2 small Tomatoes roughly cut into pieces
- 1 pc small Ginger finely chopped
- 1-2 pods Garlic finely chopped
- 1 Tbsp Olive oil
- 2 Tbsp Milk optional
- to taste Salt
- few corns Black pepper
- to taste Dried herbs/Oregano
Instructions
- Heat the olive oil in a pressure cooker, add the ginger garlic, peppercorns.
- Saute the onions till transparent.
- Add the carrots and tomatoes and saute for 2-3 mins.
- Add water a little more than to cover the veggies.
- Pressure cook for 8-10 mins.
- Cool and blend (with milk if desired)
- Add salt and oregano. Mix well, heat and serve
