Moong sprouts Chawli green sabji
A simple, winter-special and nutritious preparation of moong sprouts and chawli greens with a hint of ajwain flavour that can be relished with multigrain rotis or phulkas. It is loaded with iron, folate, calcium, vitamin A and protein to boost your health in the winters and otherwise.

Ingredients
- 1 cup Moong sprouted
- 2 1/2 cups Chawli greens (Amaranth leaves) washed and chopped
- 3/4 cup Tomatoes chopped finely
- 1 Tbsp Ajwain (Carom seeds)
- 1 tsp Mustard seeds
- a pinch Asafoetida powder
- 1/4 tsp Turmeric powder
- 1 tsp Red chilli powder
- 1/2 tsp Dhana jeera powder or Curry powder
- to taste Salt
- few Curry leaves
- 2 no Green chillies split
- 1 Tbsp Oil
Instructions
- Heat the oil in a non-stick pan and add the ajwain, mustard seeds, asafoetida, curry leaves and green chillies to make a tempering.
- Add the Moong sprouts and the turmeric powder, cover for 3-5 mins and let it cook.
- Add the tomatoes and allow to cook for about 2 mins.
- Add the chawli greens , red chilli powder, dhana jeera powder and salt.
- Cover with a lid and allow to cook for 5-7 mins.
- Serve hot with Millet rotis or phulkas.
