Apple Walnut Salad
A light, flavourful fruit and nut salad that is quick and easy to make. It is tossed in a smooth yoghurt dressing. It provides good soluble fibre and omega 3 fatty acid. Try it to Enjoy it!
Servings: 4
Ingredients
- 1 no. Romaine Lettuce coarsly Chopped
- 1 no. Red Apple Cored and cut into thin slices
- 1 no. Green Apple Cored and cut into thin slices
- 1 small Celery head sliced
- 50 gms (1/3 cup) Walnuts Coarsely chopped
- 4-5 no. Orange (Wedges)
Yogurt Dressing
- 90 ml (1/3 cup) Low fat yoghurt
- 90 ml (1/3 cup) Mayonnaise
- 1 Tbsp Mustard
- 1 Tbsp Apple cider vinegar
Instructions
- Arrange the lettuce in a large salad bowl.
- Add apple, celery & walnuts.
- Drizzle the dressing over the salad.
- Garnish with sliced orange wedges and serve immediately.
Yogurt Dressing
- Whisk yoghurt, mayonnaise & mustard in small bowl.
- Add vinegar and whisk again.
- Drizzle the dressing over salad.
- Serve immediately or keep in refrigerator.
