Apple Walnut Salad

A light, flavourful fruit and nut salad that is quick and easy to make. It is tossed in a smooth yoghurt dressing. It provides good soluble fibre and omega 3 fatty acid. Try it to Enjoy it!

Ingredients

  • 1 no. Romaine Lettuce coarsly Chopped
  • 1 no. Red Apple Cored and cut into thin slices
  • 1 no. Green Apple Cored and cut into thin slices
  • 1 small Celery head sliced
  • 50 gms (1/3 cup) Walnuts Coarsely chopped
  • 4-5 no. Orange (Wedges)

Yogurt Dressing

  • 90 ml (1/3 cup) Low fat yoghurt
  • 90 ml (1/3 cup) Mayonnaise
  • 1 Tbsp Mustard
  • 1 Tbsp Apple cider vinegar

Instructions

  • Arrange the lettuce in a large salad bowl.
  • Add apple, celery & walnuts.
  • Drizzle the dressing over the salad.
  • Garnish with sliced orange wedges and serve immediately.

Yogurt Dressing

  • Whisk yoghurt, mayonnaise & mustard in small bowl.
  • Add vinegar and whisk again.
  • Drizzle the dressing over salad.
  • Serve immediately or keep in refrigerator.
