Spinach Mushroom Soup

Drink your greens with this healthy yet tasty soup. The regular Spinach has become exotic as it got paired with mushrooms. This soup is a package of fibre, B vitamins, antioxidants and vitamin D.

Ingredients

  • 200 gms Spinach (about 1 bunch) cleaned well with the delicate stalks
  • 150 gms Mushrooms (about 1 cup) cleaned and sliced
  • 100 gms Green peas
  • 2 no. Spring onions ( onions with the greens) cleaned and chopped
  • 1 small Potato peeled and cubed
  • 1 Tbsp Olive oil
  • to taste Salt
  • to taste Pepper powder
  • to taste Lime juice

Instructions

  • Heat oil in a pressure cooker.
  • Add mushrooms, saute for 2-3 mins.
  • Add spring onions, saute till transparent.
  • Add the potato and peas, stir for 2 mins.
  • Then add the spinach and spring onion greens.
  • Add water just enough to cover the veggies.
  • Pressure cook for 5-8 mins.
  • Cool and blend well, adding water if too thick.
  • Add salt, pepper, and heat, add lime juice just before serving.
