Spinach Mushroom Soup
Drink your greens with this healthy yet tasty soup. The regular Spinach has become exotic as it got paired with mushrooms. This soup is a package of fibre, B vitamins, antioxidants and vitamin D.

Ingredients
- 200 gms Spinach (about 1 bunch) cleaned well with the delicate stalks
- 150 gms Mushrooms (about 1 cup) cleaned and sliced
- 100 gms Green peas
- 2 no. Spring onions ( onions with the greens) cleaned and chopped
- 1 small Potato peeled and cubed
- 1 Tbsp Olive oil
- to taste Salt
- to taste Pepper powder
- to taste Lime juice
Instructions
- Heat oil in a pressure cooker.
- Add mushrooms, saute for 2-3 mins.
- Add spring onions, saute till transparent.
- Add the potato and peas, stir for 2 mins.
- Then add the spinach and spring onion greens.
- Add water just enough to cover the veggies.
- Pressure cook for 5-8 mins.
- Cool and blend well, adding water if too thick.
- Add salt, pepper, and heat, add lime juice just before serving.
