Recipe: Buckwheat Upma
Buckwheat Upma
Wholesome, healthy, tasty upma made from superfood Buckwheat. It's a perfect combination of high-quality protein and other essential nutrients.
Servings: 4 people
Ingredients
- 2 Cups Buckwheat Groats (cooked)
- 1/2 Nos Carrots (finely Chopped)
- 1 Nos Onion small (finely chopped)
- 1/2 Nos Capsicum (finely chopped)
- 1 Nos Tomato (finely chopped)
- 1 Nos Potato small (finely Chopped)
- 1 Tsp Lemon Juice
For tempering
- 2 Tbsp Oil
- 10-12 Leaves Fresh Curry Leaves
- 1 Nos Green Chilli (cut in half)
- 1/4 Inch Ginger (grated)
- 1 Tsp Cumin Seeds
- To taste Salt
- 1/4 Tsp Freshly ground black pepper
- 3 Tbsp Fresh Coriander leaves (to garnish)
- 4 Tbsp Cashew & Raisins (optional)
Instructions
- Wash buckwheat and boil it for 10-15 mins, till its nice and soft. Keep a watch for it to not get overcooked as it gets mushy quickly. Once done, drain water and keep it aside.
- Heat oil in a pan, add cumin seeds, and let it splutter.
- Add curry leaves, green chilli, ginger & saute for 30 secs.
- Incase adding nuts, add at this stage.
- Add chopped onion, potato, carrots and saute.
- Cover the pan with a lid and let it cook on slow flame for 5 mins.
- Add rest of the veggies capsicum, tomatoes and saute and let it cook for 2 -3 mins.
- Now add the cooked buckwheat groats, salt and black pepper and mix well.
- Let it cook for 2 mins and then add lemon juice.
- Mix well.
- Garnish it with corriander leaves and few cashews.
- Serve hot with yoghurt.
