Pomegranate Cucumber & Tomato Salad
A salad which is easy and quick to make. It has a burst of colours in the form of pomegranate, tomato and bell peppers. It is loaded with antioxidants, vitamin C and helps to hydrate and detox

Ingredients
- 1 no. Large Pomegranate (cleaned)
- 1 no. Small Cucumber (cut into cubes)
- 4 no. Large Tomatoes (cut into chunks)
- 1 no. Red chilli (deseeded and thinly sliced)
- 1 no. Red or Yellow Bell pepper (cut into cubes)
- 1 handful Fresh Mint leaves (roughly chopped)
- 1 handful Fresh Cilantro (roughly chopped)
- 1 no. Lime juice
- 1 tsp Olive oil Drizzle little
Instructions
- Mix everything in a bowl.
- Then add lime juice and drizzle olive oil over the salad.
- Toss everything together.
- Ready to serve.
